Desiree is not the classic gnocchi recommendation, but it is workable and often excellent with the right method.
Bake or steam-dry the flesh before ricing. Add flour only until the dough stops sticking. Overmixing is the real problem, not the variety.
If your goal is ultra-pillowy gnocchi, a more floury potato may give wider margin. If your goal is bite and structure, Desiree can be a win.
