GI for potatoes is not fixed; variety, method, and serving context all change the number.

GI charts are useful, but easy to misuse.

Potatoes eaten alone, hot, and overcooked behave differently than potatoes paired with protein, fat, and fiber.

If glucose response is a priority, control method before blaming the ingredient.
